Maddur Vada
Maddur Vada Recipe (Karnataka Style)
Ingredients
1 cup Rice flour
½ cup Semolina (Rava/Sooji)
1 medium Onion (finely chopped)
2–3 Green chilies (finely chopped)
1 tsp Ginger (grated or chopped)
8–10 Curry leaves (chopped)
2 tbsp Coriander leaves (chopped)
1 tsp Cumin seeds
1 tbsp Sesame seeds (optional)
1 pinch Asafoetida (Hing)
Salt to taste
2 tbsp Hot oil (for dough)
Water as needed
Oil for deep frying
How to Make Maddur Vada (Step-by-Step)
Step 1: Mix Dry Ingredients
In a mixing bowl add:
Rice flour
Semolina
Cumin seeds
Sesame seeds
Hing
Salt
Mix well.
Add Onion & Spices
Now add:
Chopped onions
Green chilies
Ginger
Curry leaves
Coriander leaves
Mix everything nicely.
Make Dough
Add 2 tbsp hot oil into the mixture
Slowly add water little by little
Make a stiff dough (not too soft)
Rest it for 10 minutes.
Shape the Vadas
Take a small ball of dough
Flatten it into a round vada shape
Keep it slightly thick
Fry the Vadas
Heat oil in a deep pan
Fry vadas on medium flame
Cook until golden brown and crispy
Remove and drain on tissue paper.
Serving Suggestion
Serve Maddur Vada hot with:
Coconut chutney
Tomato ketchup
Masala tea
Tips for Perfect Maddur Vada
Dough should be stiff for crispy vadas
Do not fry on high flame
Onions release moisture, so add water carefully
